Asparagus has been used as a vegetable and medicine, owing to its delicate flavor, diuretic properties, and more with a long history going back as far as the first century. The ancient Greek physician Galen (prominent among the Romans) mentioned asparagus as a beneficial herb during the second century AD. Roman Emperor Caesar Augustus was such a fan that he organized elite military units to procure it for him – the famed Asparagus Fleets.
What better way to “spring clean” your body than with spring’s most celebrated vegetable?
1 bunch asparagus, approximately 1 pound, washed and ends trimmed
2 tablespoons extra virgin olive oil
2 teaspoons fresh-squeezed lemon juice
1 teaspoon Dijon mustard
1 teaspoon white wine vinegar
½ teaspoon minced shallot
¼ teaspoon fresh thyme leaves
Sea salt to taste
Steam asparagus over high heat until bright green and tender-crisp, about 3 minutes.
While asparagus is steaming, whisk together the oil, lemon juice, mustard, vinegar, shallot, and thyme. Season with sea salt to taste.
Place asparagus on a platter, drizzle with vinaigrette, and serve.
